The Tekuamana menu is inspired by Mexican tradition and elevated by sourcing of organic, local and wild ingredients. The kitchen cooks without seed-oils, opting instead for ghee, avocado oil and rendered fat as well as incorporating house made lacto-fermented foods, sourdough bread and kombucha. The result is the most healthful and distinctive culinary experience in the area. 

The Tekuamana bar has brought together local experts to create a menu of designer cocktails, craft beers, natural and organic wines as well as exciting non-alcoholic options - all of which use the highest quality local ingredients to create unique, fresh and delicious taste experiences.

Chef Jorge Miramontes

Chef Jorge Miramontes from Tepic, Nayarit is a young Mexican Chef that initially found his inspiration in his home kitchen, as his grandmother was a professional cook and his mother is a natural-born cook. Thanks to them, he decided to specialize in culinary arts and so began a worldwide journey into creative cuisine.

A stand out for his unique approach, monumental quality, use of local ingredients, and solid culinary techniques, which can be tasted in every dish.

His experience in kitchens worldwide includes the Gran Velas Hotel in Riviera Nayarit, Santa Ana Restaurant in Spain, Cortez Restaurant in Guadalajara, The Beerbox Prime in Puerto Vallarta, Hotel El Pez in Tulum, and Las Brisas Restaurant at the Fairmont Mayakoba in Playa del Carmen.

His talent and determination led him to collaborate in creating various projects including his own seafood-inspired restaurant in Cancún, El Palmar Trapiche Restaurant, and as Corporate Chef at Grupo Ensamble in Los Angeles and Riviera Maya.
